Nose Pure and delicate, with mineral notes of oyster shell mixed with floral scents and a hint of honey.
Palate With beautiful saline tension, ripe and delicate fruit and hints of sweet alyssum, this wine is beautifully structured, fresh, crisp, delicately smooth, unpretentious and very pure.

Wine The 2023 White Chablis Per Aspera is the estate’s signature wine—a consistent standout, vintage after vintage. Pure, fresh, and driven by a vibrant minerality, it strikes the perfect balance with just the right ripeness to round out its salty tension. This white delivers unfiltered pleasure, with generous fruit flavors, impressive depth, and all the hallmark freshness of classic Chablis. A true favorite—awarded 92/100 by the Selection Committee.
Vinification Hand harvested. Alcoholic fermentation with temperature control between 16 and 18°C. 100% malolactic fermentation. Aged on fine lees for 10 to 15 months in stainless steel vats and oak barrels (500-litre demi-muids).
